
Microgreens at Home: 7-Day Harvest Guide
What Are Microgreens?
Microgreens are young vegetable greens harvested just after the first true leaves develop, typically 7-14 days after germination. They contain up to 40 times more nutrients than mature plants and add intense flavor to salads, sandwiches, and garnishes.
What You Need
- Shallow trays (2-3 inches deep) with drainage holes
- Potting soil or coconut coir
- Seeds (sold specifically for microgreens)
- Light source (sunny windowsill or grow light)
- Spray bottle for watering
Step-by-Step Process
Day 1: Sow
Fill trays with 1-1.5 inches of moistened soil. Scatter seeds densely across the surface (about 10-12 seeds per square inch). Press gently into soil. Mist with water. Cover with a damp paper towel or another tray to create darkness for germination.
Days 2-3: Germination
Keep covered and mist once daily. Seeds will sprout within 48-72 hours. Keep temperature between 65-75°F (18-24°C).
Days 4-5: Uncover and Light
Remove the cover once most seeds have sprouted. Place under grow lights or in a bright window. Lights should be 4-6 inches above the tray, on for 12-16 hours daily.
Days 6-7: Grow Out
Water from below by placing the tray in a shallow water bath for 5 minutes. Avoid wetting the leaves to prevent mold. You will see the first true leaves emerging.
Day 7-10: Harvest
Cut stems just above the soil line with clean scissors. Harvest all at once for best flavor. Use immediately or store in the refrigerator for up to 5 days in a sealed container with a paper towel.
