
Growing Microgreens Indoors This Winter
Why Microgreens
Microgreens are young seedlings harvested 7-21 days after germination. They contain 4-40 times more nutrients than mature plants and can be grown on any windowsill. They are the fastest, most rewarding indoor crop for urban gardeners.
Getting Started
You need four things: shallow trays (10x20 inch), potting mix or coconut coir, seeds, and light. A south-facing window provides enough light for most varieties. For faster growth, add a basic LED grow light 6-12 inches above the trays.
Best Beginner Varieties
- Sunflower: nutty flavor, 10-14 days, easy to grow
- Pea shoots: sweet and crunchy, 10-14 days
- Radish: spicy kick, 7-10 days, fastest to harvest
- Broccoli: mild flavor, 10-14 days, super nutritious
Step-by-Step Growing
Fill trays with 1-2 inches of moist growing medium. Sprinkle seeds evenly across the surface. Mist with water and cover with another tray or plastic wrap for 2-3 days of blackout. Uncover and place in light. Water daily from the bottom.
Harvesting
Cut microgreens just above the soil line with clean scissors when they have developed their first true leaves. Rinse gently and use immediately in salads, sandwiches, or as garnishes. Most varieties yield one harvest per planting.
Troubleshooting
Mold on soil surface means too much water and not enough airflow. Add a small fan for gentle air circulation. Leggy, stretched seedlings need more light. Seeds that do not germinate may be old or planted too densely.
